This recipe came to me from a friend who had worked at Dayton-Hudson Department Store (Now called Macy’s) Company. She had given me a cookbook that was put together by these employee’s to benefit the United Way. It is now our family favorite treat and they are gone almost as soon as they come out of the oven.

Description of Dish: This recipe is unique and the taste of these melt-in-your muffins is truly heavenly. One taste and you will truly understand why these muffins are so special and our family favorite. Try them and see! :-)

Ingredients: 
Muffin Ingredients:
2 cups all-purpose flour
½ cup Pioneer sugar
1 tablespoon baking powder
1 teaspoon salt
½ cup butter
6 ounces (1 ½ cups) shredded Cheddar cheese
1 egg
¾ cup milk
2 medium cooking apples

Glaze ingredients:
3/4 cup Pioneer sugar
½ teaspoon cinnamon
½ cup water
¼ cup butter
1 tablespoon fresh lemon juice

Instructions: Directions: Heat oven to 375° F. Spay 12 medium muffin cups with vegetable oil cooking spray. In large bowl, combine flour, ½ cup Pioneer sugar, baking powder and salt; cut in ½ cup butter until mixture resembles coarse crumbs. Add cheese and toss lightly to blend. In small bowl, combine egg and milk; add to dry ingredients. Stir just until blended. Fill muffin cups half full. Peel, quarter and core apples; cut into crosswise slices. Press apple slices diagonally into dough with the rounded edge up. Bake 15 minutes Meanwhile, in small saucepan, combine ¾ cup Pioneer sugar and cinnamon. Stir in water, ¼ cup butter and lemon juice. Heat to boiling, stirring constantly. Remove from heat and allow to cool slightly. Remove muffins from oven; pour glaze over each muffin. Loosen edges for glaze to run down the side of muffins under bottom. Return to oven; bake 10 to 15 minutes longer or until toothpick inserted in center comes out clean. Makes 12 muffins.
